Dough Ingredients
1 cp biscuit mix
1/2 cp milk
3 TBSP Extra virgin olive oil
Filler Ingredients
1/3 cp Extra virgin olive oil
1/2 cp flour
1/3 cp onion, chopped
1/2 tsp salt
1/4 tsp black pepper
1 cp chicken broth
1 cp water
2/3 cp milk
2 cps cooked chicken (chopped)
1 large potato (diced)
1 15 oz can of peas
1 carrot (sliced)
Dough Instructions:
1 - Add all ingredients to a food processor and pulse
until you get a 'ball'.
2 - Turn onto a floured board and using flour on hands to
avoid sticking, roll out to 1/8" thick then set aside.
Filler Instructions:
1 - Add the olive oil to a 1 1/2 qt saucepan, then add onion
and saute' under medium heat until onion pieces are translucent.
2 - Add flour and stir until smooth, then stir in broth and milk
and continue heating until thickened, then remove from heat and
set aside.
3 - Add the water to a 1 qt. saucepan, then add carrots and
potatoes and cook until soft.
4 - Preheat the oven to 450 degrees.
5 - Drain the carrots and potatoes, then add along with the peas to
a greased baking dish.
6 - Add the mixture from step 2, then add the chicken, and stir
until uniform.
7 - Cut the rolled out dough into a piece that will cover the surface,
place on top of the mixture then make severalslits to allow steam to vent.
8 - Bake for 15-20 minutes, then remove and cool for 10 minutes,
or so before serving.
Comments - This is a really great dish for using leftover cooked chicken,
turkey, or beef and will serve 4 people.
