Frank's Chili Chicken and Potato
2 skinless, boneless chicken breasts
3 medium potatoes, peeled and cut into 1/2 thick slices
1 mall onion, chopped
1/4 cp cooking wine
1 tbsp cornstarch
1 tbsp chili powder
1/2 tsp paprika
1/4 tsp garlic powder
1/2 cp water
2 tbsp tomato paste
Instructions:
1 - Preheat oven to 425 degrees
2 - Add the water, wine, tomato paste, onion, and garlic powder to a
saucepan or skillet and simmer until onion is tender.
3 - Add cornstarch, chili powder and paprika, and simmer with stirring
until thickened.
4 - Place the chicken pieces and potato slices in a greased glass
baking dish, then add the thickened mixture and stir to coat all.
5 - Bake in oven for 15 - 20 minutes or until chicken is cooked through.
Comment - This is comfort food at its best!
