Frank's Quick Baked Potato Soup
1 medium potato washed, then quartered with skin on
1/2 yellow onion, peeled
1 tsp butter
Salt and pepper to taste
1 cp milk
1 tbsp grated cheddar cheese
Instructions:
1 - Pulse the potato and onion in a food processor until rough chopped
2 - Put into a micowave safe bowl and mix in the butter, seasonings
and 1 tbsp of the milk
3 - Microwave for 5 minutes on high then add the rest of the milk and the cheese.
4 - Microwave for 1 minute more on high
Comment - Quick and easy potato soup!
