#0044 Baked Green Pepper & Onion Omelet(07/05/07)
Frank's Baked Green Pepper & Onion Omelet
2 tbsp olive oil
1 small yellow onion, chopped
1/2 green pepper, chopped
1/4 lb cooked ham, chopped
8 eggs
1/2 cp medium white sauce(or 1/2 can of cream of mushroom soup)
6 slices of swiss cheese
1/8 tsp salt
Dash of black pepper
1 - Saute' onion and green pepper until vegetables are soft (but not browned)
2 - Beat the eggs, then add all the other ingredients.
3 - Pour the mixture into a greased 9X13 glass dish.
4 - Bake in preheated 350 degree oven for 20 minutes.
5 - Remove from oven and add sliced cheese to cover the top.
6 - Return to the oven for about 5 minutes to melt the cheese.
Comments - Had this great baked omelet this morning.
Two of my grandsons liked it and I hope you will too!
