Frank's Simmered Squash and Onions(8/13/08)
1 whole yellow crookneck squash (diced)
1 large sweet onion peeled and sliced thin)
3 tbsp olive oil
1 tsp salt
1/8 tsp pepper
Instructions
1 - Add all the ingredients to a cast iron skillet & stir to coat vegetables.
2 - Turn to high heat and when hot reduce to low and simmer 25 - 30 minutes.
