2 medium sweet potatoes or yams, sliced 1/8" thick (skin on)
Instructions:
1 - Add the caramelized onions and salt and pepper to the milk.
Caramelized Onions
1 - Peel 2 medium yellow onions, cut off ends, then cut in half top to bottom.

2 cups of milk
1/4 cp caramelized onions(recipe below)
Salt and freshly ground back pepper
2 - Puree' in a blender or food processor until well blended.
3 - Place sweet potato slices in a single layer in the bottom of a 9 X 9 casserole.
4 - Add a layer of the puree', then alternate with another single layer of potatoes.
5 - Continue until all has been added. (should be 4 or 5 layers)
6 - Cover and bake in a preheated 375 degree oven for 30 minutes.
7 - Uncover and bake for another 30 - 45 minutes (until all puree is absorbed).
Slice thinly (1/8" thick) and separate all the strips.
2 - Heat a non-stick skillet and add 2 tbsp olive oil. When very hot but not smoking
add the onions then turn down to medium heat and stir to coat all the onion.
3 - Continue to cook for 20 - 30 minutes, stirring frequently to avoid burning the onions.
When the caramelized onions are done they should be golden brown.
