Crumb dumplings
2 1/2 cpsm left-over bread
1 small onion, chopped fine
4 tbsp shortening
1/8 tsp pepper
1/2 tsp salt
1/8 tsp nutmeg
1 tsp baking powder
2 eggs
Instructions
1 - Soak the bread in warm water to cover for 10 minutes; then prews out all the water.
2 - Gently cook the onion in the shortening; add the bread and continue cooking until
the mixture is somewhat dry.
3 - Put in the seasonings, baking powder, and the eggs, well beaten.
4 - Form into balls using one tablespoon for each.
5 - Drop into a pan of boiling water; cover and boil gently until the dumplings
come to the top. (about 25 minutes)
6 - Drain and serve garnished with crumbs of bread fried brown in butter sprinkled over the top.
7 - Use with meat. If any are left over they may be sliced and served at a subsequent meal.
