Cocoanut Yeast Buns
1 compressed yeast cake
1/4 cp lukewarm water
1 3/4 cps milk
1 tsp salt
about 8 cps flour
1/3 cp sugar
1 egg
2 tbsp melted shortening
shredded cocoanut
Instructions
1 - Dissolve the yeast in the water; add to the milk with the salt.
and beat in 3 cps flour.
2 - Cover and let rise in a warm place till spongy, about an hour.
3 - Then add the sugar, the egg, beaten, the shortening, and the flour
to knead, from 5 to 6 cps.
4 - Transfer to an oiled bdowl; brush with a little melted shortening.
5 - Cover and let stand till doubled in size.
6 - Then shape into walnut sized balls. Place an inch apart on oiled pans.
7 - When light, bake about 20 minutes in a hot oven (375 degrees).
8 - When nearly done, brush with slightly baten egg white; and strew with cocoanut.
9 - Replace in the oven for 3 minutes.
