Jambalaya
2 slices bacon
3 tbsp minced onion
1 1/2 tbsp flour
1 3/4 cps water
1 pt canned tomato
1 cp rice
1 1/2 cps cooked or canned shrimp
1 tsp salt
1/4 tsp pepper
Instructions
1 - Cut bacon in squares; fry until fat flows freely
2 - Add the onion, and when yellowed, the flour and then gradually the water and tomato.
3 - Bring to the boiling point; add the rice; and cook 12 minutes.
4 - Then add the shrimps, salt, and pepper.
5 - Cover and steam 25 minutes longer.
