Swedish Omelet
1 tbsp flour
1/2 tsp salt
1/8 tsp pepper
1 cp milk
4 eggs
Instructions
1 - Combine the flour, salt and pepper; gradually add the milk and mix to a smooth paste.
2 - Separate the eggs; beat the yolks thick; and stir in the milk and flour mixture.
3 - Whip the whites until stiff; and pour in the egg yolks, not quite folding in the egg white.
4 - Transfer to a warm frying pan containing a tbsp of melted butter.
5 - Cook slowly, frequently lifting up the omelet around the edges so that the uncooked
egg may precipitate.
6 - When cooked through and brown on the bottom, place in oven under the broiler to set the top.
7 - Then cut the omelet at right angles to the handle; fold over and transfer to a hot platter.
The flour used in this omelet keeps it from falling.
