Onion Omelet
2 tbsp butter
1 cp chopped onion
4 eggs
2 tbsp hot water
3/4 tsp salt
1/8 tsp pepper
Instructions
1 - Fry the onion until yellowed in the butter; Separate the eggs.
2 - Beat the whites stiff; and the yolks till lemon colored.
3 - Add the seasonings and water to the yolks; stir in the onions.
4 - Fold into the whites and transfer into the frying pan in which the onions were cooked.
5 - Add a little butter if necessary; fry on low heat until brown on the bottom.
6 - If convenient, place under the broiler to firm the top.
7 - Cut at right angles to form a hinge; fold over and serve.
