Welsh Rabbit
1 tbsp butter
1/2 lb dairy cheese
1 egg
1 egg yolk
1/2 cp beer
1/2 tsp salt
few grains cayenne
1/4 tsp mustard
1 tsp meat sauce
Crisp Crackers
Instructions
1 - Use only the highly flavored dairy cheese for this dish.
2 - To make the rabbit, melt the butter, add the cheese, chopped fine.
3 - Stir over low heat until it melts.
4 - Beat the egg and egg yolk; and add the beer.
5 - Gradually stir this into the melted cheese.
6 - Cook and stir until the mixture thickens.
7 - Stir in the seasonings mixed with the meat sauce.
8 - Serve at once on the crackers.
