Cheese Souffle'
4 tbsp butter
3 tbsp flour
1/2 cp milk
1/2 tsp salt
few grains cayenne
1/2 cp grated American dairy cheese
3 eggs
Instructions
1 - Melt the butter, add the flour, smooth to a paste and gradually add the milk.
2 - Add the cheese and seasonings; and cook until the mixture boils.
3 - Add to the egg yolkds beaten until thick; cool and fold in the egg whites, whipped stiff.
4 - Transfer to an oiled baking dish; and bake in a moderate oven, 350 degrees for 35 minutes,
or until firm in the center and brown on the top.
