Bran-Cheese Croquettes
3 tbsp butter
3 tbsp flour
1 tsp salt
1/8 tsp pepper
1/2 tsp grated onions
2 cps milk
2 cps chopped American cheese
2 cps bran
fine dry bread crumbs
Instructions
1 - Melt the butter; Stir in the flour, seasonings and onion.
2 - Gradually add the milk; when boiling, stir in the cheese.
3 - Stir until smooth, cooking slowly; add the bran and let stand a few hours.
4 - Form into balls containing a tbsp each; and roll in crumbs.
5 - Fry in deep fat hot enough to brown a cube of bread in 55 seconds.
