Chili Con Carne
2 tbsp savory drippings
1 small onion, minced
1 clove garlic(optional)
1 lb round steak
1 tbsp chili powder
1 tsp salt
1/2 tsp pepper
1 1/2 cps boiling water or stock
Instructions
1 - Melt the drippings; and put in the minced onion and the clove of garlic, if used.
2 - Fry until they start to turn yellow; add the meat, cut ii inch cubes; and cook until browned.
3 - Add the seasonings and the water or soup stock; (a bouillon cube or 1 tsp meat extract
dissolved in 1 1/2 cps of water may be substituted for the stock).
4 - Cover and simmer for 1 hour, or until meat is tender.
5 - Serve on and with with boiled rice seasoned with salt, pepper, and a little melted butter.
