3 tbsp fat
1 lb ground beef, any cut
1 large onion, diced
1/2 green pepper, minced
3 sprigs parsley
1 cp stewed or canned tomatoes
8 small peeled potatoes
salt
paprika
Instructions
1 - Melt the fat; add the onion and green pepper, and the meat, which has been
cut in a large dice; fry until brown.
2 - Add the parsley, chopped, the tomatoes, and enough water to barely cover the meat.
3 - Cover, closely; amd cook over moderate heat for 40 minutes.
4 - Lay the potatoes, thinly sliced, on the goulash; and season with salt and paprika.
5 - Cover and continue cooking for 20 minutes or until potatoes are tender.
6 - Border with buttered and seasoned noodles; and serve on a heated platter.
