Roast Duck
(1) 3 lb duck
potato dressing
salt
pepper
flour
Instructions
1 - Order the duck dressed, singe and clean it.
2 - Wash, drain and stuff with potato dressing.
3 - Tie the wings and legs in position with string.
4 - Dust the bird with salt and pepper; dust with flour and lay breast down in the roasting pan.
5 - Add 1 cp water; and brown in a hot oven, 400 degrees F. about 20 minutes.
6 - Reduce the heat to 350 degrees; cover and continue roasting until tender.
7 - Allow 25 minutes to the lb; baste the bird occasionally during roasting.
8 - When half done,turn the breast upwards to finish cooking
