Potted Chicken
1 3 lb fowl
1/4 cp savory drippings
1 medium-sized onion, sliced
1 cp celery tips and diced stalks
1/2 cp diced carrots
2 cps boiling water
1/2 tsp mixed pickle spice<1 1/2 tsp salt
mashed white or sweet potatoes
Instructions
1 - Singe and clean the fowl; in an iron pot melt the drippings.
2 - In this, slightly fry the onion, celery and carrots.
3 - Put in the fowl and turn it all over to become slightly browned.
4 - Add the boiling water and seasonings; cover closely and simmer slowly about 4 hrs.
5 - Replenish the water aqs necessary and turn the bird occasionally.
6 - Serve with a gravy made from the stock thickened with 1 1/2 tbsp flour mixed
to a smooth paste in an equal amount of cold water and brought to a boil.
7 - Accompany with mashed white or sweet potato.
