Fish Turbot
1 1/2 cps milk
1 onion, sliced
1 sprig parsley
1/4 cp butter
1 tsp salt
1/8 tsp pepper
1/8 tsp nutmeg
1 egg
1 tbsp lemon juice
2 cps flaked cod, cooked, or canned fish
1/2 cp cracker crumbs
1 tbsp butter (additional)
Instructions
1 - Scald the onion and parsley with milk; then remove.
2 - Melt the butter; add the flour, seasonings, and gradually the hot milk to make a sauce.
3 - When boiling, pour into the egg, slightly beaten.
4 - Add lemon juice to the fish; put a layer of fish in a buttered baking dish.
5 - Sprinkle with salt and pepper, and cover with sauce. Continue in this way until all is used.
6 - Cover with the crumbs mixed with the final tbsp of butter.
7 - Bake in a hot oven, 375 degrees F. until brown.
