Baked Lima Beans
1 lb dry lima beans
1/8 tsp baking soda
1 (No. 2) can tomatoes
1 tsp sugar
1/2 tsp salt
A few grains pepper
1 small onion, minced
4 slices of bacon, minced
Instructions
1 - Soak the beans overnight; drain; cover with fresh water, add the soda; and boil until the beans are tender
2 - Combine the tomatoes, sugar, salt, pepper, and onion; and arrange alternate layers or the tomatoes and beans
in an oiled baking dish or casserole.
3 - Sprinkle the top with the chopped bacon; cover, and bake in a slow oven, 325 degrees F. for 2 hrs.
4 - At the end of 1 1/2 hrs, uncover the beans and continue cooking for 1/2 hr, or until the beans are brown
on top and have absorbed all the water.
