Casserole of Beans
1 lb dried pe beans or 1 large can baked beans
1 tsp salt
1/4 tsp pepper
2 tbsp brown sugar
1 small can tomatoes
1 medium-sized onion
4 slices bacon, sliced
Instructions
1 - If dried beans are used, soak overnight, drain off the water; and cook tender in boiling salted water
2 - Drain; reserve the liqor for soup. Season the beans with salt, pepper and sugar; and arrange
alternate layers of the prepared beans and tomatoes in a baking dish finishing with tomatoes.
3 - Peel and slice the onion; arrange on top and sprinkle with the chopped bacon.
4 - Cover; and bake in a slow oven for 1 hr; then remove the cover and continue baking
until the beans have absorbed most of the moisture.
