Cauliflower Gratinee
1 medium-sized head of cauliflower
1 tsp salt
1 tsp sugar
3 tbsp butter
3 tbsp flour
3/4 tsp salt (additional)
1/8 tsp pepper
1 1/2 cps milk
1 1/2 cps dry bread crumbs
1 tbsp butter (additional)
1/2 cp grated American cheese
1 tbsp minced parsley
Instructions
1 - Remove the tough outer stalks from the cauliflower.
2 - Place head down in boiling water to cover, add sugar and the tsp of salt;
and boil until tender, about 30 minutes.
3 - Drain; place upright on a heatproof platter.
4 - Melt the 3 tbsp butter in a saucepan; add the flour, remaining salt and pepper.
5 - Stir until smooth; and gradually stir in the milk.
6 - Cook ans stir until the mixture thickens; and pour over and around the cauliflower.
7 - Sprinkle with the bread crumbs, browned in thre remaining butter mixed with the cheese
to which the parsley has been added.
