Corn Loaf
2 tbsp butter
1 small onion, minced
2 tbsp flour
3/4 tsp salt
a few grains of pepper
1 cp milk
1 can golden bantam corn
2 eggs, slightly beaten
1 1/4 cps cracker crumbs
2 tbsp butter (additional)
Instructions
1 - Melt the butter; add the onion; and fry until yellow.
2 - Add the flour, salt and pepper, and gradually the milk.
3 - Add the corn, eggs, and 1 cp of the cracker crumbs and
transfer to and oiled baking dish or loaf pan.
4 - Sprinkle with the remaining crumbs; and dot with the additional 2 tbsp butter.
5 - Bake in a moderate oven, 350 degrees F.. for 35 minutes, or until
firm in the center and brown on the top.
