Baltimore Crabmeat Mould
1 tbsp plain gelatin
1/4 cp cold water
3/4 cp mayonnaise
1 cp flaked crabmeat
12/2 cp minced celery
2 tbsp minced parsley
1/2 cp chopped cucumber
2 tbsp minced stuffed olives
1/2 tsp salt
1/2 tsp paprika
1 tbsp lemon juice
few grains cayenne
lettuce
watercress
Instructions
1 - Soften the gelatin in the cold water; melt over steam; and add to the mayonnaise.
2 - Combine with the remaining ingredients; and transfer to a ring mouild rinsed in cold water.
3 - Chill in the refrigerator until firm; unmould and fill the center with lettuce hearts
and sprigs of cress.
4 - Garnish with cut lemon dusted with paprika
