French Custard Pie
3 eggs
1/2 cp sugar
<1/4 tsp saltbr>
1/2 tsp vanilla
2 cps milk
pie pastry
1/4 cp sugar (additional)
Instructions
1 - Separate the eggs; combine the yolks with 1/2 cp sugar and salt; and beat until thick.
2 - Add the milk and vanilla; beat until blended; and fold in the egg whites, whipped stiff.
3 - Roll out the pie crust to 1/8" thick. Fit into a 9" pie plate. and build up the sides with a crimped edge.
4 - Pour in the custard mixture and bake in a hot oven, 400 degrees F. for 10 minutes to set the crust.
5 - Reduce the heat to 350 degrees F. for 30 minutes or until a knife when inserted comes out clean.
6 - Then caramelize, (melt)the 1/4 cp sugar in a heavy frying pan; add 4 tbsp water and cook until
a little dropped from a spoon forms a thread.
7 - Carefully pour over the top of the pie; cool; and serve.
