Apple Strudel
Ingredients
1 1/3 cps flour
1/4 tsp salt
3 tbsp shortening
3 tbsp milk
1 egg
2 cps finely chopped peeled apples
1/2 cp chopped raisins
1/2 cp chopped almonds (optional)
1/2 cp sugar
1 tsp cinnamon
1 cp fine dry bread crumbs
1/4 cp shortening (additional)
Instructions
1 - Sift the flour and salt; and work in the shortening until flaky with a knife.
2 - Combine the milk and the egg, well beaten; and add to the first mixture.
3 - Work with a spoon to form a soft dough.
4 - Combine the apples, raisins, almonds, sugar, cinnamon and the bread crumbs
browned in the 4th cp of shortening.
5 - Transfer the dough to a board dusted with flour; and roll as thin as possible into a rectangular shape.
6 - Spread with the prepared apple mixture; and lightly press the filling into the dough with a rolling pin.
7 - Roll the strudel up like a jelly roll and transfer to a shallow pan generously rubbed with shortening.
8 - Bake in a moderate oven. 350 to 375 degrees F. for 40 minutes, basting twice during the baking with
a little melted shortening.
9 - Serve sliced, hot or cold, plain or with a pudding sauce or whipped cream.
