Banbury Tarts
Ingredients
1 cp seedless raisins
3/4 cp sugar
frated rind and juice 1 lemon
2 soda crackers
chopped pastry
Instructions
1 - Chop the raisins; and combine with the sugar, grated rind and juice of lemon
and the crackers rolled to fine crumbs
2 - Roll out the pastry to 1/8" thickness and cut in small rounds, using a saucer as a pattern.
3 - Place 4 tablespoonfuls of the raisin mixture in the center of each round of pastry.
4 - Moisten the edges, and fold over to form a tart.
5 - Press together with the tines of a fork dipped in flour.
6 - Slash the top to allow the steam to escape; and transfer to a cookie sheet or shallow pan.
7 - Bake in a hot oven, 375 degrees F. for 20 minutes.
