Cocoanut Gingerbread
Ingredients
1/2 cp shortening
1/3 cp sugar
1 egg
1 cp molasses
2 1/2 cps flour
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp cloves
1/2 tsp salt
1 cp shredded cocoanut
1 cp hot water
Instructions
1 - Cream the shortening; and work in the sugar. Stir in the molsasses and the egg, slightly beaten.
2 - Sift the dry ingredients; add 1/2 of the cocoanut; and combu=inen with the first mixture.
3 - Add the hot water; and beat until the batter is smooth.
4 - Transfer into ann oiled and floured square pan; and sprinkle the top with the remaining cocoanut.
5 - Bake in a moderate oven, 350 degrees F. for 40 minutes or until firm in the center.
