Cardinal Relish
Ingredients
1 qt chopped cooked beets
1 pt chopped raw cabbage
1 pt. chopped raw celery
1 cp grated horseradish
1/2 cp brown sugar
1/2 cp minced onion
1/3 tsp black pepper
1 1/2 tsp salt
cold cider vinegar
Instructions
1 - Combine the vegetables; add the horseradish, sugar, pepper, and salt and put in a crock.
2 - Pour in cold cider vinegar to cover and let stand 24 hours before serving.
