Bouillon
Ingredients
2 lbs lean beef
2 qts cold water
1 carrot
1 onion
1 stalk celery
1 bay leaf
sprig of parsley
clove
1 tsp salt
dash of pepper
Instructions
1 - Chop the beef from the round and pour over it 2 qts. cold water.
2 - After it has stood for an hour, put it on the fire, cover and let it slowly come to boiling point.
3 - If scum gathers, skim it off.
4 - When it has been simmering gently 4 hours, put in the diced vegetables (and seasonings)
5 - After it has simmered another hour, strain and cool.
