Creole Soup II
Ingredients
1/4 cp butter
2 tbsp chopped onion
3 tbsp chopped green pepper
1/3 cp flour
1 qt brown beef stock
1 pt tomatoes
salt
pepper
cayenne
2 tbsp grated horseradish
1 tsp vinegar
Instructions
1 - In 1/4 cp butter cook 2 tbsp chopped onion and 3 tbsp chopped green peppers for 5 minutes.
2 - To this add 1/3 cp flour, 1 qt brown beef stock, and 1 pt tomatoes.
3 - After it has simmered 15 minutes, strain the soup, then put in seasoning of salt, pepper, and cayenne.
4 - When ready to serve, add 2 tbsp grated horseradish and 1 tsp vinegar.
