Fish Chowder*
Ingredients
1/2 lb salt pork
1 sliced onion
3 large potatoes
3 lbs fresh fish
boiling water
1 pt hot milk
1 tbsp butter
3 large crackers, brokenn up
Instructions
1 - Take 1/2 lb salt pork; cut into small pieces; try it out and fry in it 1 sliced onion until both are brown.
2 - Cut into slices 3 large potatoes and 3 lbs fresh fish.
3 - In a large saucepan place altenate layers of potatoes, fish, and pork and onion, sprinkling with salt and pepper.
4 - When all materials are in, cover them with boiling water and let simmer for 20 minutes.
5 - Into 1 pt hot milk put 1 tbsp butter ad 3 lagre crackers, broken up.
6 - Pour this milk sauce over a mound of the fish on a serving dish.
