Hollandaise Sauce
Ingredients
1/2 cp butter
3 egg yolks
juice of 1/2 lemon
1 tsp salt
`1/4 tsp pepper
Instructions
1 - Beat until creamy 1/2 cp butter; then add one at a time, the yolks of 3 eggs.
2 - After beating thoroughly, add the juice of 1/2 lemon, 1 tsp salt and 1/4 tsp pepper.
3 - When nearly ready to serve, put in gradually 1/2 cp boiling water.
4 - Place the bowl in a saucepan of boiling water, stir the sauce quickly until it becomes thick.
