Baked Fillet De Sole
Ingredients
2 lbs flounder
onion
celery
carrot
salt
cayenne
clans or oysters
strained tomato
mushrooms
cracker dust
butter
Instructions
1 - Bone and skin 2 lbs flounder, then boil for a short time in water containing a little
onion, celery, carrot, salt, and cayenne.
2 - Lay the fish, after it has been drained, in 2 lines on a buttered platter leaving a space between the 2 pieces.
3 - Fill the space with clams or oysters, srained tomatoes, mushrooms, some cracker dust and an abundance or butter.
4 - Let this bake in a moderate oven for 20 minutes.
