Scalloped Fish
Ingredients
2 cps milk
2 tbsp cornstarch
1 tbsp butter
2 hardboiled eggs
2 cps cooked fish
1/2 cp mashed potatoes
salt
pepper
1 cp bread crumbs
Instructions
1 - Take 2 cps milk and heat all but 1/4 cp.
2 - In this cold milk, dissolve 2 tbsp cornstarch, add it to the hot milk and cook for 15 - 20 minutes, stirring often.
3 - Stir in 1 tbsp butter. the yolks of 2 hardboiled eggs rubbed smooth, then the whites rubbed through a sieve.
4 - Now take 2 cps cooked fish (canned fish may be used), separate inhto flakes and put with it 1/2 cp of mashed
potatoes, seasoning to taste with salt and pepper.
5 - In an oiled baking-dish place a layer of fish and potato mixture and cover it with the sauce.
6 - Add alternate layers of fish mixture and sauce until none is left.
7 - Spread over the top 1 cp bread-crumbs with bits of butter.
8 - Bake in quick oven for 15 minutes.
