Broiled Chicken II
Ingredients
young spring chicken
salt
pepper
Instructions
1 - Take a young spring chicken and after cleaningn and carefully removing all pinfeathers,split it
down the back, break the joints and take out then breast bone.
2 - If you are not sure that the chicken is very tender,it is well to give it a vapor bath before broiling.
3 - To do this, nearly fill your dripping-pan with boiling water as it sets in a moderate oven, maike a brace
of 2 sticks or bars of some sort across the pan and place the chicken on them.
4 - Cover and let it steam for about 30 minutes in the oven.
5 - After this, broil the chicken until tender, turning the flesh side to then fire first and cooking
most on that side.
6 - Be sure that the fire is not too hot.
7 - Not more than 20 minuites ought to be required for broiling.
8 - To serve, place on a hot platter, spread with butter and season with salt and pepper
