Boiled Spinach
Ingredients
spinach
1/4 tsp soda
sliced hard cooked eggs
salt
pepper
butter
lemon juice
Instructions
1 - To prepare the spinach for boiling, after picking over carefully and removing wilted leaves and roots,
wash in several waters, making sure no sand is left.
2 - A large kettle will be needed for boiling, which may be done in 2 ways:
3 - Either place the spinach, (2 lbs) in the kettle with no more water than appears on the leaves after washing
and let it cook, covered until tender, adding salt when spinach is partly cooked, or plunge the spinach into a
half-kettleful of boiling water, adding 1/4 tsp soda for every quart of water and salting to taste.
In the latter case, boil, uncovered, until the spinach is tender.
4 - Before serving, drain the spinach and chop it, adding salt, pepper and butter
5 - If desired a little lemon juice may be mixed in while the spinach is being chopped.
6 - Or, the spinach may be pressed as dry as possible in a colander, then chopped with a knife before
it is put back in the kettle. There the salt, pepper and butter should be stirred in.
7 - When it is very hot, the spinach should be placed in a mound on the serving dish and garnished
with sliced hard cooked eggs.
