The dream of finding the "fountain of youth", and the quest for "stopping or reversing" aging have been around for a long time in one form or another. Most of us remember being taught in grammar school about Ponce de Leon and his quest for a spring called The Fountain of Youth This legend and those before and after it may titillate the imagination, but in the real world, the likelihood of finding an elixir of youth seems unlikely. This doesn't however mean that there is no hope for slowing down the aging process so that we can all live longer. There is hope and much research is being done in the slowing of aging. One of these fields of research is in nutrition and how variations in what we eat can affect aging. It has been said that "you are what you eat". If this is true then the focus should be on how we can develop a diet that will slow down the aging process. One of the most promising is called "Calorie Restriction with Optimal nutrition" or CRON for short. The terminology was put forth by the late Dr. Roy Walford in his book "Maximum Life Span", and other books that followed.
