Fish Chowder
Ingredient Amounts
6 lbs cod or haddock
2 cps cold water
1 1/2 inch cube fat salt pork
1 onion, sliced
4 cps Maine potatoes
2 cps boling water
4 cps scalded milk
Salt and pepper
3 tbsp butter
8 common soda crackers, split
Instructions
1 - Buy the whole cod or haddock cleaned. Remove the head and tail.
2 - Add the cold water and boil for 20 minutes
3 - Fry out the salt fat pork and add the onion and cook un til tender.
4 - Add the potatoes cut in 3/4 inch cubes and the 2 cps boiling water.
5 - Cook for 5 minutes add the liquor drained from the cooked fish.
6 - Pick apart the fish, removing skin and bones and add the fish to the mixture.
7 - Simmer for 10 minutes and add the scalded milk. Season tom taste with salt and pepper.
8 - Before serving add the butter and common crackers, split.
9 - If made about 1 hour before serving, the flavor is better.
