Frankfurter Crown Potato Dressing

Ingredient Amounts

1 1/2 lbs frankfurters
potato dressing
3 slices bacon

Instructions

1 - Thread frankfurters through center on a string, tie ends of string,
and stand frankfurters on end in the shape of a crown on a rack in a roasting pan
2 - Fill center with potato dressing(see below).
3 - Place slices of bacon on top of dressing.
4 - Place in a moderate oven (350 degrees) until bacon browns.
5 - Add 1/2 cp water, cover and let cook 20 minutes.

Potato Dressing

4 slices bacon
1 tbsp chopped onion
1 tbsp chopped parsley
1 tsp salt
water
1/8 tsp pepper
1 qt bread cubes
1 egg
2 cps Maine mashed potatoes

Dice bacon, brown. Add onion and cook slowly until tender
Add seasonings. Combine with cubed bread.
Add slightly beaten egg and mashed potatoes.
Toss together until evenly combined.
Add water for desired consistency.
