1 banana
1 tbsp unsalted butter, softened
2 tbsp firmly packed brown sugar
2 tbsp lightly toasted pecans
1/4 cp flour
1/4 tsp baking powder
1/2 tsp ground cardamom
3 tbsp sugar
1 egg
1/4 tsp vanilla
Instructions
1 - In small saucepan melt 2 tbsp butter and split between 2 1 cup ramekins
2 - Sprinkle brown sugar and pecans over butter
3 - Slice banana into 1/4" thick slices and arrange over pecans
overlapping and lightly pressing to fit
4 - In a small bowl whisk together flour, baking powder, cardamom
and a pinch of salt
5 - In another bowl beat together the remnaining butter and sugar
until mixed well.
6 - Beat in the egg and vanilla, then beat in the flour mixture until
just combined.
7 - Divide the batter between the two ramekinsand bake on a baking sheet
in the middle of the oven about 25 minutes (or until an inserted toothpick
comes out clean.)
8 - Use a sharp knife to loosen the cake from the inside surface, then
invert on plates to serve.
