Blueberry Muffins
2 cps enriched all-purpose flour
3 tsp baking powder
2/3 tsp salt
3 tbsp sugar
1 cp milk
1 egg, well beaten
2 tbsp melted shortening
1 cp blueberries
Instructions
1 - Sift flour, then set aside 1/4 cp to dredge berries.
2 - Measure 1 3/4 cps flour and sift again with the baking powder,
salt and sugar.
3 - Combine milk, beaten egg, and shortening.
4 - Stir liquid into the flour only until all flour is mixed in.
5 - Dredge blueberries in flour then fold into the mix.
6 - Drop by spoonfuls into well greased muffin tins until tins are 2/3 full.
7 - Bake for 20 minutes in a 400 degree preheated oven.
