Corn Meal Griddle Cakes
1/2 cp yellow corn meal
1 1/2 cps boiling water
1 1/4 cps sour milk
2 cps. sifted enriched all-purpose flour
1/3 cp sugar
1 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1 egg or 2 yolks, well beaten
2 tbsp melted shortening
Instructions
1 - Slowly add corn meal to boiling water and cook 5 minutes.
2 - Cool, add sour milk and stir into sifted dry ingredients.
3 - Add eggs, then shortening, stirring until smooth.
4 - Drop by spoonfuls on hot griddle.
5 - Cook until puffed and full of bubbles, then turn and bake on
other side.
6 - Makes about 20 cakes
