4-lb chicken, cut up as for frying
3 tbsp enriched all-purpose flour
2 cps milk
salt, pepper
Instructions
1 - Season a small amount of the flour with salt and pepper.
2 - Roll chicken in flour, as when frying
3 - Place shortening in skillet and when hot, brown the chicken
as you do when frying it.
4 - Remove the chicken to a casserole of deep baking dish.
5 - Leave 4 tbsp of shortening in the skillet.
6 - To this add 3 tbsp of flour and when well mixed add 2 cups
of rich whole milk.
7 - Bring to a quick boil, then pour over the chicken and cover
8 - Place in oven set at 350 degrees and cook until chicken is tender
and the cream sauce has thickened. This usually requires 2 hours.
