Macaroni and Tomato Casserole
1 1/2 cps uncooked macaroni
2 cps. cooked or canned tomatoes
3 tbsp onion, chopped
1 tbsp green pepper, chopped
1/2 cp celery, chopped
3 tbsp butter or fortified margerine
2 tbsp enriched all-purpose flour
1/2 cp soft bread crumbs
1 1/4 tsp salt
1/8 tsp pepper
Instructions
1 - Cook macaroni in boiling, salted water until tender
2 - Rinse and drain macaroni
3 - Cook onion, celer and green pepper in 2 tbsp butter or margerine until tender
4 - Add the flour, blend well, add tomatoes and seasoning and cook until thickened
5 - Combine with the macaroni and place in a greased 2 qt casserole
6 - Sirnkle bread crumbs which have been buttered in 1 tbsp butter or margerine over the top.
7 - Bake uncovered for 30 minutes in a preheated 375 degree oven.
