Beef Stew from Leftover Pot Roast
Cut leftover meat in medium size pieces, approx. 1" cubes
To this add leftover gravy. There should be at least 2 cps,so it
may be necessary to add water.
Place in skillet or medium size stew pan, and bring to a boil.
Add carrots which have been cut into halves lengthwise.
Add onions cut in medium size pieces and potatoes cut in half lenthwise.
Should there be any leftover canned tomatoes, they make an exccellent addition.
As soon as the mixture is steaming, reduce heat to low anc continue cooking
until the vegetables are done.
Other leftover vegetables such as celery, peas, or snap beans may be added.
Do not add too much liquid or the mixture will be soupy.
There should be sufficient gravy to serve over vegetables. Add salt & pepper
as needed.
