Buttermilk Pie
pastry for 1 crust
2/3 cp sugar
1 tbsp enriched all-purpose flour
1 tbsp butter or fortified margerine
2 egg yolks, beaten
1 tbsp lemon juice
grated rind of 1 lemon
1/8 tsp salt
1 cp buttermilk
2 egg whites
2 tbsp sugar
Instructions
1 - Combine all ingredients in order given except the 2 egg whites and 2 tbsp sugar.
2 - Pour into an unbaked pie crust and bake at 425 degrees for 30 minutes.
3 - Beat the egg whites until stiff, add sugar and spread on the pie.
4 - Reduce heat to 325 degrees and bake until merangue is brown (about 15 minutes.
Recipe amount - makes (1) 8" pie.
