Pimiento Filling
1 tbsp sugar
1 tbsp butter or fortified margerine
1 tbsp unsifted, enriched all-purpose flour
3 tbsp vinegar
1 egg, well beaten
1/2 cp coffee cream or top milk
1/2 tsp salt
2 hard-cooked eggs, chopped
1 pkg cream cheese
1 tbsp grated onion
3 tbsp chopped pimiento or diced green or red pepper.
Instructions
1 - Cook the sugar, butter or margerine, flour, vinegar, beaten egg, coffee cream and salt on low heat until thick
2 - Remove from heat and add chopped eggs, cheese, onion and pimiento
3 - Place in a fruit jar and keep in refrigerator.
