Corn Chowder
2 cps. canned or cooked new corn or
4 cps potatoes cut in 1/2 inch pieces
1 slice onion, cut fine
4 cps scalded milk
8 soda crackers
3 tbsp butter or fortified margerine, or bacon drippings
salt and pepper
Instructions
1 - Put shortening in a kettle, and when melted, add onion, and cook slowly about 5 minutes.
2 - Turn heat to medium as soon as shortening is melted.
3 - Add potatoes and 2 cps. boiling water and cook until potatoes are soft.
4 - Add corn and milk.
5 - Heat to boiling point.
6 - Season with salt and pepper, more shortening if desired and crackers which have been split.
Serves 6 generously.
