Pickled Beets
1/3 cp cider vinegar
1/3 cp tarragon vinegar
1 1/3 cp. beet juice
1 2-inch stick of cinnamon
15 whole cloves
3 tbsp brown sugar
3/4 tsp salt
12 or 14 average size beets
Instructions
1 - Peel beets, slice, cook in 1/2 cp water until done.
2 - Save the liquid in which they were cooked.
3 - Add sufficient water to make 1 1/3 cps juice.
4 - Boil all the ingredients (except beets) together for 15 minutes.
5 - Strain and pour over beets.
6 - Let stand overnight or pour into jars and seal.
